Ingredients

  • 2 cups cooked brown rice
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup chopped fresh tomato
  • 1/4 of a chopped peeled pitted avocado
  • 1 tablespoon crumbled chèvre (goat) cheese
  • 2 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
