Berry-Topped Brownie Bites

Ingredients

Brownies

Frosting

  • 1/4 cup margarine or butter, softened
  • 1 1/2 cups powdered sugar
  • 1/3 cup dark chocolate chips, melted (2 oz)
  • 1/2 teaspoon vanilla
  • 1 to 2 tablespoons fat-free (skim) milk

Garnish

  • 3 cups raspberries or strawberries
  • Powdered sugar, if desired

    Heat oven to 350°F. Grease or spray bottom only of 13x9-inch pan. In medium bowl, stir brownie ingredients with spoon until well blended. Spread batter in pan.

    Bake 28 to 30 minutes or until brownies are set and begin to pull away from sides of pan. DO NOT OVERBAKE. Cool completely, about 45 minutes.

    In small bowl, beat 1/4 cup margarine with electric mixer on medium speed until light and fluffy. Beat in remaining frosting ingredients, adding enough milk for desired spreading consistency. Spread over cooled brownies.

    Cut into 8 rows by 6 rows. Top each serving with raspberries, and sprinkle with powdered sugar.

    For a more decadent bite, microwave fat-free hot fudge topping uncovered on High 15 seconds; stir until smooth. Drizzle over raspberries.

    For easy cutting, instead of greasing pan, line pan with foil before spreading batter in pan, leaving foil hanging over edges. After cooling, lift brownies out by foil edges, and place on cutting board.
