Ingredients

  • 2 bags (16 ounces each) frozen lima beans, thawed and drained
  • 1 medium onion, chopped (1/2 cup)
  • 2/3 cup vegetable broth
  • 1/3 cup maple-flavored syrup
  • 1/3 cup barbecue sauce
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

    Mix all ingredients in 3 1/2- to 6-quart slow cooker.

    Cover and cook on low heat setting 7 to 8 hours or until beans are tender.

    We found that canned beans taste and look better when cooked on low rather than on the high setting because the beans won't overcook and become mushy. The long, slow cooking enhances the already-cooked beans with the flavors of the other ingredients in this dish.

    Maple syrup adds a sweetness that complements the delicate flavor of lima beans. You can use the same amount of molasses if you prefer a heartier flavor to go with the barbecue sauce. And if you want a bit of meat added to the beans, add a 1/2 cup chopped fully cooked ham.
