Apple and Cheerios™ Banana Muffins

Ingredients

To prepare the muffins:

  • 1/2 cup Apple Cinnamon Cheerios™ cereal, ground
  • 1 cup quinoa flour
  • 1/2 cup potato starch
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup coconut oil
  • 1/2 cup light brown sugar
  • 1 egg
  • 1/2 cup mashed banana
  • 1/2 cup green apple, finely diced

To prepare the topping:

  • 1/4 cup light brown sugar
  • 1/2 teaspoon cinnamon
  • 1 pinch grated nutmeg

    To prepare the muffins: Preheat the oven to 350 °F.
  • 2
    In a container, combine the ground Cheerios™ with the quinoa flour, potato starch, cinnamon, baking powder, baking soda and salt.

    In a separate container, combine the coconut oil and sugar. Add the egg and mashed banana.

    Add the apples and incorporate to the Cheerios™ mix. Pour the batter into the individually-lined muffin pan.

    To prepare the topping: Combine all the ingredients and drizzle about 1/2 teaspoon of the mix over each muffin. Bake for 30 minutes or until muffins are golden brown. Serve and enjoy!
