Betty blogger Corey Valley breaks her family’s lunchbox rut with these creative, fast-fix brunch ideas.

Packing breakfast for lunch can be a fun way to break out of a lunchbox rut. To make sure those bellies stay full until dinnertime, it's important to pack your little ones’ “brunch” lunchboxes full of protein. You can do this easily with a serving of Nature Valley Protein Granola, with a handful of nuts or by incorporating Yoplait Greek yogurt into your recipes and snacks. To get your own creative brunch-box ideas stirring, here are a few of my family’s favorite protein-packed lunches with fun breakfast twists.

In the side container of this lunchbox I packed some creamy Greek Yogurt Fruit Dip. Along with some easy-to-eat fruit kabobs, I also included a couple homemade waffles as yummy dippers!

Mini pancakes for lunch? Yes please! Mini-sized Vanilla Yogurt Pancakes aren't just cute, they're super satisfying, thanks to the incorporation of Yoplait Greek yogurt in the batter. In the side compartments I packed fresh raspberries, a serving of Yoplait Greek yogurt, topped with Nature Valley Protein Granola for crunch.

Everyone loves pizza, right? So why not pack a fruit-topped breakfast pizza for lunch? This build-your-own bagel fruit pizza will surely surprise and delight come lunchtime. Simply pack your favorite bagel, along with separate containers of diced fruit, Nature Valley Protein Granola and Yoplait Greek 100 yogurt. When lunchtime rolls around, all your young ones need to do it top their bagel with the yogurt, followed by the extra juicy toppers. Now that's a filling, fun protein packed lunch!

Would your kiddos go for a brunch box? If so, what would you pack and how would you work in some extra protein?
