I've truly not met an eggplant dish that I haven't enjoyed. One of my family’s favorite main dishes is Eggplant Parmesan, a staple in our house. These Grilled Eggplant Roll-Ups are a twist on a classic that I turn to when I want to shake things up.
Before you begin, you need to remove the excess water and bitterness from the eggplant. That calls for lightly sprinkling slices with salt and allowing them to sit for approximately 30 minutes. Be sure to plan ahead when making this meal and don’t miss this crucial step. (Don’t worry...the recipe explains exactly how to do this.)
When ready, we grill the eggplant slices, giving them beautiful grill marks. Next, the slices are stuffed with an amazing creamy cheese and herb filling. Then the roll-ups are baked, creating a warm blanket of cheese filling.
