The Prettiest Pasta Salad for Summer Nights

This pasta salad is a lovely supporting side dish, but with green chiles and chicken added in, it also doubles as fresh and light dinner for your summer nights.

This Southwest Green Chile-Chicken Pasta Salad is a quick and easy meal for any busy weeknight, but it’s also fun and impressive enough to share with friends at your next potluck or party! It starts with a box of Betty Crocker Suddenly Pasta Salad southwest style to give it a jump start, but thanks to some added fresh mix-ins, no one will ever guess it came from a box. Just wait till you try it, it’s sure to become a favorite!

Begin by gathering your ingredients. You’ll need: a box of Betty Crocker Suddenly Pasta Salad southwest, cooked chicken breast, lettuce, tomato, avocado, green onions, Mexican cheese, cilantro, mayonnaise, milk, and Old El Paso™ chopped green chiles.

Cook the pasta according the instructions on the package, then drain and rinse under cold water to cool.

To make the dressing for the salad, combine the seasoning packet from the pasta box with mayonnaise, milk and green chiles.

Toss the dressing with the pasta.

In a large serving bowl, add half of the lettuce, half of the pasta, and half of the rest of the ingredients. Repeat layers and serve immediately.

To make ahead, simply leave out the lettuce and avocado and store in the fridge. Add them to the rest of the salad just before serving.
