Sloppy Joes+Enchiladas+Pot Pie = Dinner Tonight

Three of your favorite comfort food dinners come together in one impossibly easy recipe that calls for only 10 minutes of prep time.

We have major love for sloppy joes. They’re one of the quickest dinners to get on the table, always a hit with the kids, and they’re undeniably delicious.

This Enchilada Sloppy Joe Pot Pie takes the traditional sloppy joe up a notch with Old El Paso™ enchilada sauce and green chiles.

Rather than serve these on a bun, we topped the zesty meat mixture off with a biscuit crust. You may never go back to regular ol’ sloppy joes again!

To start, you’ll need: lean ground beef, enchilada sauce, grated cheddar, diced green chiles, Bisquick, milk and an egg.

Begin by pre-heating your oven to 400℉.Brown the beef in a 10-inch, oven-safe skillet and drain any grease from the pan. (This is a one-dish dinner, so make sure your skillet is safe for oven use!)

Stir in the green chiles and enchilada sauce.

To make the topping, whisk together the Bisquick, egg and milk in a small bowl. Set aside.

Sprinkle the Cheddar cheese on top of the meat mixture.

Next, pour the Bisquick mixture over the cheese.

Allow the pot pie to bake for about 30 minutes or until the crust is golden brown. Let it cool in the pan for about five minutes before cutting and serving. We like this served with a little guac and sour cream on the side!
