Mediterranean Flatbread Pizza

A flatbread appetizer with tastes of the Mediterranean.

I recently went to a baby shower where I had an amazing Mediterranean-inspired dip. It was so good that I thought about it for days afterwards.

I wanted to recreate the flavors of that dip but in a different form. I thought about all of my favorite Mediterranean flavors and decided a great way to serve them up as an appetizer would be in pizza form. Flatbread not only makes this an easy appetizer, but it brings a lot of flavor and texture to the dish as well.

Start by drizzling olive oil on the flatbread. Bake for just a few minutes.

Remove the flatbread from the oven and add your toppings. Begin with a good layer of hummus.

Next up is zucchini that is cut into half circles.

chopped, marinated artichoke hearts.

Next add some sliced olives. I used green olives, but Kalamata olives would be a really good choice, too.

To finish it off, give it a sprinkle of feta cheese. Bake until it is warmed through, 7 to10 minutes.
