Crunchy Granola Muffins

Add a little crunch to breakfast muffins by adding Cascadian Farms® organic granola both to the batter and to the tops.

True story: I could make a batch of muffins for breakfast each and every morning and never get tired of it. I’m always looking for new ways to change up my muffins, or new things to add to them. So one morning I had the idea to add granola to my muffins. Not only would it add some nice extra flavor, but it would also give them a little bit of crunch. 

You will need flour, Cascadian Farms® organic cinnamon raisin granola cereal, baking powder, baking soda, salt, eggs, brown sugar, buttermilk, vegetable oil and vanilla.

In a bowl, combine the flour, granola, baking powder, baking soda and salt.

In another bowl, whisk together the eggs, brown sugar, buttermilk, vegetable oil and vanilla.

Combine the wet ingredients with the dry ingredients and stir just until combined.

Fill 18 muffin cups about two-thirds full of the batter.

Top with more of the granola and bake until cooked through.
