The sweet taste of butterscotch goes so well with tart apples that this just might be the best comfort dessert ever!

Apples, butterscotch, nuts and brown sugar served over a buttery sweet cake may be my all-time favorite dessert. When I make this treat, the awesome aroma of sweetened apples fills the whole house. Before the cake even comes out of the oven, my family starts asking when they can have a slice.

Beautiful tart apples and a few other simple ingredients go into making this wonderful cake.

It only takes a few minutes to chop the apples and to mix them with the butterscotch, brown sugar and nuts. I put the sweet apple mixture in the bottom of the pan and top it with the cake batter.

As the cake bakes up to a lovely golden brown, my house is filled with the comforting, sweet smell of fall. When I turn the cake out onto a serving plate, the warm and gooey butterscotch apple mixture is revealed.

I like to serve this cake warm. It’s great by itself. Also try slices with whipped cream or ice cream and a drizzle of butterscotch sundae syrup.

Ingredients

  • Base
    • 3small apples, peeled, chopped (about 2 1/2 cups)
    • 1cup chopped pecans
    • 1cup butterscotch chips
    • 1/2cup packed brown sugar
    • 1teaspoon apple pie spice
    • 1/4cup butter, melted
  • Cake
    • 1box Betty Crocker™ Super Moist™ Yellow Cake Mix
    • 1box (4-serving size) butterscotch instant pudding and pie filling mix
    • 1 1/3cups water
    • 1/2cup butter, softened
    • 4eggs

Directions

  • 1Heat oven to 325°F. Grease dark nonstick 12-cup fluted tube cake pan with shortening or cooking spray.
  • 2In medium bowl, toss apples, pecans, butterscotch chips, brown sugar, apple pie spice and melted butter. Set aside.
  • 3In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl frequently.
  • 4Pour apple mixture evenly into bottom of pan. Pour cake batter evenly over top.
  • 5Bake about 55 minutes or until cake is golden and springs back when lightly touched. Place heatproof plate upside down over pan; turn plate and pan over. Remove pan. Cool cake slightly before serving.
