when freezing cake layers, should I brush them with a simple syrup to keep them moist?

Freezing cake layers is a good idea. For best results, freeze the baked cake layers, well wrapped. Thaw the layers and then add the syrup if desired, then crumb coat, then frost. The syrup before freezing could potentially soak the bottom of the layer.
