Asian Cooking? Rice vinegar is sweeter, milder and less acidic than common Western vinegars. You could use apple cider vinegar with a pinch of sugar mixed in or you could use white wine vinegar. I would recommend you mix 1 part water with 3 parts white wine vinegar to use for the rice vinegar. Here's a handy chart for more Emergency Substitutions.
