Can I substitute buttermilk for milk?

Asked on 2/5/2014 12:00:00 AM by mamorris

Milk and buttermilk are different in that buttermilk is acidic. Normally, to achieve the best baking results when using buttermilk instead of milk, you substitute baking soda for some or all of the baking powder. For each cup of buttermilk used in place of sweet milk, reduce the amount of baking powder by 2 teaspoons, and replace with ½ teaspoon of baking soda.
