Sheet cakes are great for serving a large crowd. Your 19 x 13-inch sheet cake pan is about double the size of a 13 x 9-inch baking pan. I would double the cake mix ingredients as you were going to do. Beat the eggs well before mixing them just to make it easier to mix. You don't want to overmix the cake batter or you'll get large tunnels. Your baking time and temperature should be the same as the batter depth will be similar. You do need to have good air circulation all around your baking pan for even baking. You might like to check our wedding cake tips if you will be making large cakes frequently.
