Cake Mix Carrot Pumpkin Cookie Sandwiches

With back-to-school in full swing, Haley was looking for a great-tasting and fun on-the-go-treat. Once she combined her love for cozy pumpkin spice with one of Betty’s classic cookie recipes, her Cake Mix Carrot Pumpkin Cookie Sandwiches were born!

What makes Haley’s version uniquely transportable? It’s so simple, it's genius! Instead of spreading the luscious cream cheese frosting on the tops of the cookies, Haley spreads it on the bottoms, so she can sandwich two together. Her batter also includes an extra dash of pumpkin pie spice to give them that irresistible fall flavor.

Haley’s Tips

  • If you like extra pumpkin flavor like Haley does, add 1 ½ teaspoons pumpkin pie spice. Don’t have pumpkin pie spice on hand? Make your own by whisking together ½ teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg and ¼ teaspoon allspice.
  • For flatter cookies, gently press the cookie dough balls down with wet fingers prior to baking.
  • If you are baking in a warm or humid climate, place the cream cheese frosting in the refrigerator for 30 minutes before frosting the cookies. This will help prevent it from melting.
