Salmon with White Beans & Tomatoes

Add pizzazz to weeknight dinners with this easy, one-pan meal featuring salmon, tomatoes and beans.

Raise your hand if you get nervous when cooking fish. We have a secret. You don’t have to be anxious, especially if you make this simple salmon dinner! Ready to knock you family’s socks off? 

This recipe doesn’t require lots of ingredients, just salmon, a can of tomatoes, a can of cannellini beans, an onion, a handful of kalamata olives and a lemon.

Start by seasoning the salmon. Ours still has the skin on. That doesn’t bother us, but if you would prefer, ask for it to be removed at the fish counter when you buy the salmon. 

Next, place the salmon skin-side up into a hot pan. Sear and flip. Sprinkle the onions around the salmon so they cook down a bit. 

Easy so far, right? 

Now, just throw in the tomatoes, drained and rinsed beans, and the olives.

Cover and cook 5 to 10 minutes or until the salmon flakes easily with a fork.

That’s it! This is great alone or served with some cooked rice.

Ingredients

    • 2tablespoons olive oil
    • 1salmon fillet (3/4 lb), cut into 4 serving pieces
    • Salt and pepper
    • 1cup chopped red onion
    • 1can (15 oz) Progresso™ cannellini beans, drained, rinsed
    • 1can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
    • 1/4cup pitted kalamata olives, cut in half
    • 1/2lemon

Directions

  • 1In 12-inch skillet, heat oil over medium heat. Sprinkle salmon with salt and pepper. Place salmon, skin side up, in skillet. Cook 2 to 3 minutes until golden brown; turn. Sprinkle onion around salmon. Cook 2 to 3 minutes, stirring occasionally, until onion is softened.
  • 2Add beans, tomatoes and olives to skillet. Cover; cook 5 to 10 minutes until thoroughly heated and salmon flakes easily with fork.
  • 3To serve, divide bean mixture among 4 plates; top each with 1 salmon piece. Squeeze lemon over each serving.
