The Five-Minute-Prep Dinner You Need Now

Need a quick-prep meal that’s ready and waiting for you when you get home? This slow-cooker dinner is just the ticket! Made with creamy Alfredo sauce, cheesy tortellini pasta and shredded chicken, this is what a no-fuss meal is all about.
Slow-Cooker Chicken Alfredo Tortellini

My favorite kind of dinner is the one-pot meal. Here’s a perfect example: Slow-Cooker Chicken Alfredo Tortellini. This dish starts with ordinary cheese tortellini and is taken to the next level by adding chicken, mushrooms, garlic, baby spinach and a rich, creamy Alfredo sauce.

This dinner is amazingly easy to put together. You just layer the chicken, mushrooms, and sauce into the crock in the morning and let it simmer happily by itself for five hours. By dinnertime, the chicken is so tender that you can pull it apart with a couple of forks. Then all you have to do is stir in the tortellini and spinach, and let it cook for about ten more minutes. And that’s it—dinner is served! You can dish it up right from the crock and pass the Parmesan.

Place chicken breasts into a 6-quart slow cooker. Season with salt and pepper. Top with sliced mushrooms.

In a separate bowl, mix together Alfredo sauce and minced garlic. Pour sauce mixture over the chicken and mushrooms. Cover and cook on low for 5 hours.

Shred chicken with 2 forks. Add in the tortellini and baby spinach. Stir to combine. Cover and cook for 10 more minutes, or until pasta is cooked.

Top with Parmesan cheese and enjoy!
