Do you ever find yourself in a lunch rut? You know, those week-long stretches of eating the same sandwich or hitting the same (overpriced) takeout spot for your midday meal? Yeah, I’ve been there too. Then I remember that there are magical things like freezer-burritos that can pull us all out of that sad trench of lunchtime monotony. Whenever I make these delicious bundles, I always feel triumphant because they are just so dang easy and satisfying! Just a little bit of prep gives you more than a weeks’ worth of lunches, stashed away in the freezer for those days when you just can’t muster another PB & J.
To start, whip up the
turkey filling. It’s just a few simple ingredients: ground turkey, some onion, Old El Paso chopped green chiles and Chipotle Mexican Cooking Sauce. (Consult the recipe below for the exact list of ingredients!)
Then, roast some vegetables in a hot oven—feel free to experiment with what you have on hand and what’s in season—then gather your remaining burrito ingredients: Old El Paso refried beans, shredded cheese and Old El Paso Flour Tortillas!
Then, just wrap in foil, label, date and freeze! When it comes time to reheat, simply remove the burrito from the foil, wrap with a dampened paper towel, place on microwavable plate and reheat about 3 minutes or until heated through.
