Cooking with Yoplait Greek Yogurt

Created January 10, 2017
If you’ve only enjoyed Greek yogurt as a standalone snack or quick breakfast, it’s time to think outside the box and get to know it as an ingredient, too.

From two-ingredient vinaigrettes to an addictive Sriracha dipping sauce, these super-easy ideas featuring Yoplait Greek are bound to surprise, and satisfy.

Creamy Raspberry Vinaigrette

With all the good things going for Greek yogurt–protein and calcium, anyone?–it’s no wonder people love the stuff. And when added to your favorite foods, Greek yogurt packs a ton of creaminess and flavor, minus the fat. Take this salad dressing, made with Yoplait® Greek Strawberry Raspberry yogurt. This fruity vinaigrette dressing would make a rich topper to any salad, and it couldn’t be simpler. Just add a teaspoon of raspberry vinegar (or more, to taste) to the yogurt container and stir until smooth; drizzle it on a bed of spinach with raspberries and pecans for a fresh-tasting salad packed with nutrients, fiber and flavor.

Pineapple-Curry Marinade

Once you start cooking with Greek yogurt, you’ll find yourself thinking of more and more ways to use it beyond sweet-tasting dishes. Case in point: this pineapple tandoori chicken. To make this dish, start by piercing skinless chicken legs or thighs with a fork (leg and thigh meat will stay moist through higher cooking temperatures, especially if you choose to grill). Then you’ll simply combine your desired amount of curry seasoning with a container of Yoplait Greek Pineapple yogurt and marinate in the refrigerator for 1-8 hours. Cook chicken on an outdoor grill or roast in the oven at 350° until done. The best thing about this recipe, besides the short ingredient list? You can dial the flavor up or down as desired for a dish perfectly suited to your palate, and easily multiply all the ingredients for larger batches. Greek yogurt, you’ve done it again!

Coconut-Sriracha Aioli

Like sweet potato fries? Like Sriracha? Then you’re going to love this sweet and spicy Coconut-Sriracha “aioli,” made with Yoplait Greek Coconut yogurt. The cool yogurt balances the heat from the chili sauce, and naturally brings the smooth texture of aioli with none of the fat. It might just be sweet potato fries’ perfect mate. To make, simply stir a spoonful of Sriracha into a container of Yoplait Greek Blended Coconut yogurt to taste, and serve alongside Sweet Potato Fries.

Fruit and Vanilla Yogurt Sauce

If you often have yogurt topped with fruit in the morning, it’s time to try reversing that order. For a dessert-style fruit plate breakfast, just drizzle your favorite Greek yogurt (we like the rich flavor of fat-free Yoplait Greek) onto slices of fresh fruit. Here, we’ve paired ripe and juicy mango slices with Yoplait Greek Vanilla yogurt. Finish the dish with a hefty squeeze of lime juice and a hint of zest, like we did.

Tangerine Champagne Vinaigrette Dressing

There’s something so crisp and refreshing about an arugula salad. With its soft texture and slightly spicy flavor, arugula pairs wonderfully with sweet, crunchy, salty or creamy toppings. And this salad has all of them! To make the Tangerine Champagne Vinaigrette dressing, start by whisking a little champagne or white wine vinegar into a container of Yoplait® Greek tangerine yogurt to taste. Drizzle over a bed of arugula (or spinach) topped with bacon crumbles and toasted walnuts. The variety of flavors and textures in the salad will leave you feeling satisfied– and since the dressing is so easy, it’s sure to find its way into your usual meal rotation.
