Fall is by far my favorite time of year, and nothing screams fall like a salted caramel dessert. I knew this recipe would be a huge hit. Using caramel corn on top of the cake makes it so fun and easy to decorate with my kiddos!

Ingredients

Frosting and Topping

  • 12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 3 1/2 cups powdered sugar
  • 3 tablespoons caramel topping sauce
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon coarse kosher salt
  • 2 cups caramel corn

    Preheat the oven to 375°F.

    In a large bowl using a handheld electric mixer, beat the cake mix with the sour cream, vegetable oil, eggs, egg yolks, vanilla and a pinch of coarse kosher salt until combined.

    Spray three 8-inch cake pans with non-stick baking spray containing flour.

    Divide the batter evenly between each cake pan, about 1 1/4 cups each. (A baking scale is the most accurate way to measure.)

    Bake for 13 minutes or until a toothpick inserted in the center comes out clean.

    Cool in pans for 10 minutes before flipping the cakes onto cooling racks. Let them cool completely before frosting, about 1 hour.

    Using an electric mixer fitted with the paddle attachment, beat the unsalted butter and cream cheese (both at room temperature) on low speed until thoroughly combined.

    Slowly add the powdered sugar 1/2 cup at a time. Then add 3 tablespoons of caramel sauce topping. Finish with vanilla and 1/4 teaspoon coarse kosher salt.

    When frosting the cake, do a crumb layer first, refrigerate for 30 minutes, and finish with the remaining frosting.

    Decorate the cake with caramel corn.

Double the frosting recipe if you love a higher frosting to cake ratio.

Can I substitute another type of decoration for the caramel corn?

Yes, you can definitely use a different decoration if you prefer. Caramel corn is suggested, but you could use chocolate shavings, nuts or other toppings to suit your taste.
