It’s a scorcher in here. And by “in here,” I mean my apartment. All of a sudden it’s hot, which means I can’t lollygag over the stove at breakfast time. I need a something that is cold and frozen and can easily be taken into the backyard for my morning zen-session. And while smoothies are great, they can be a little bit fussy, especially when you’re in a hurry.
These freezer pops boast all the goodness of a balanced breakfast smoothie, but are easy to make ahead of time. And since one batch makes 10 pops, investing a little time to make them will pay off for a while. To start, gather your ingredients: berries, Yoplait Greek vanilla yogurt, chopped pineapple and a banana. To up the wholesome factor, I created one layer with Green Giant Veggie Blend-Ins 100% Spinach Purée. Made with one ingredient (spinach, of course!), this shelf-stable pack of goodness is a simple way to up the nutrition in these fruity pops.
Then, dust off your blender or food processor and get to blending! I like to combine each flavor combo separately to create a striped look. If you don’t care about that, then simply blend all the ingredients together. It’ll be one odd-looking color (but utterly delicious in taste). To create pretty layers in these pops, I used a funnel to keep the sides of the molds clean. And I also made sure to let each individual layer set in the freezer ‘til firm. No need to let these stripes intermingle before it’s time, right?
Although these pops are delicious for breakfast, they’re equally yummy as an afternoon pick-me-up, pre- or post-run fuel or even for dessert. When it comes to feel-good food, it’s OK to think outside of the box!
