Freezer Breakfast Bites to Boost Your A.M. Energy

Plan ahead for hurried mornings and prep a batch of freezer-friendly breakfast bites today.

Mornings can be a whirlwind, am I right? All that rising and shining and trying to get out the door on time; it’s no wonder that for most of us, getting a wholesome breakfast in can be a bit of a struggle. These easy, bake-ahead cups are a nutritious (and delicious!) breakfast that can go from freezer to belly in one minute flat, making them the ideal for grabbing and eating on the go.

These sweet little cups start with a secret ingredient: Nature Valley Oats and Honey Crunchy Granola Bars. The crushed bars add loads of texture, sweetness and crunch. (You’ll find the complete ingredient list in the recipe below!)

In a medium bowl, mix crushed granola bars, oats, almonds, baking powder and cinnamon. In another medium bowl, beat milk, eggs, maple syrup and vanilla with whisk. Add to oat mixture, and stir to combine. Fill muffin cups three-fourths full and then top with berries.

Bake about 25 minutes or until set.

I recommend freezing these beauties so an easy breakfast is always on-hand. To freeze, place cups on a sheet pan and pop the whole thing in the freezer until solid. Once solid, seal in freezer-safe bag and store for up to three months. When you’re ready to eat, reheat (one at a time) in the microwave in 30-second to 1-minute increments until warmed through.
