The Simpler Scampi: Garlic Butter and Shrimp Foil Packets

A simple garlic butter sauce and creamy polenta give grilled shrimp an elegant (and super-easy!) upgrade.

I’ve been having so much fun making foil-packet recipes this summer. They are easy, delicious and require close to zero cleanup—how amazing is that? My latest creation: Garlic Butter and Shrimp Foil Packets. These foil packets taste like scampi, minus the fuss. Garlic butter shrimp and polenta are cooked together on the grill and are ready in less than 30 minutes, giving you an incredibly flavorful dinner. Here’s how to make them!

First, grab you ingredients and heat a gas or charcoal grill.

Next, lay a large sheet of heavy-duty foil or a double layer of regular foil on the counter. Rub the foil with a little olive oil and arrange slices of polenta in the center of the foil. Drizzle with additional olive oil and sprinkle with salt and pepper.

In a medium bowl, toss the shrimp with the butter, parsley, garlic and lemon juice. Sprinkle with salt, pepper and crushed red pepper flakes and then add the shrimp right on top of the polenta. Make sure to get all of the butter out of the bowl too!

Now all that’s left is to fold and cook! Bring the short ends of the foil together and fold twice to seal.

Next, fold in the sides to seal, leaving room for steam.

Place the foil packets on the grill, cover and cook on medium-high heat for about 10 to 15 minutes or until the shrimp is cooked through and pink. Remove from the grill, top with fresh parsley and lemon wedges, and serve!
