Peanut Butter Cup Ice Cream Cones

Forget waiting for the ice cream truck – make your own ice cream cone treats at home!

I grew up on a remote street outside the city limits, so ice cream trucks were not a common occurrence. In fact, I can only remember a handful of times throughout my childhood when the ice cream truck would make it out to my neighborhood. The minute I heard that distinct music, I would scramble inside and dig through everything I could think of to find loose change. Then I’d back outside to meet the truck and buy myself a frozen treat. 

These days, it seems even rarer to see an ice cream truck slowly driving through the streets. But guess what? It doesn’t matter, because you can make your own ice cream treats. (And don’t tell the ice cream man, but I think that these taste even better!) Here’s how you make them. You will need chocolate chips, peanut butter, chopped peanuts, peanut butter cup ice cream and sugar cones.

The easiest way to assemble these–and to keep them standing–is to put each of the cones into a cup or a glass.

Melt 4 tablespoons of the chocolate in a food-safe, resealable plastic bag; squirt the chocolate into the bottom of the cones. This stops any ice cream from leaking out of the bottom of the cone. (Plus, it’s my favorite part to eat!)

Fill each of the cones with ice cream.

Add a scoop of ice cream to the top of each cone. Place the cones in the cups into the freezer; freeze until the ice cream is completely firm.

Combine the rest of the chocolate chips and the peanut butter; melt in the microwave. Let the chocolate mixture sit until it is still liquid but almost cool to the touch.

Take the cones from the freezer and immediately dip into the melted chocolate mixture. Roll in the chopped peanuts. Return the cones to the cups; freeze completely

Ingredients

    • 12sugar-style ice cream cones with pointed ends
    • 2 1/4cups semisweet chocolate chips
    • 1container (1 1/2 quarts) peanut butter cup ice cream
    • 1/4cup peanut butter
    • 1cup peanuts, chopped

Directions

  • 1Stand each ice cream cone in small glass or cup. In small microwavable bowl, microwave 1/4 cup of the chocolate chips uncovered on High 30 to 60 seconds, stirring once, until chips are softened and can be stirred smooth. Spoon melted chocolate into small resealable food-storage plastic bag; seal bag. Cut off corner of bag; squeeze bag to drizzle chocolate in bottom of each cone.
  • 2Fill each cone to the top with ice cream. Using small scoop, top each cone with a scoop of ice cream. Freeze until firm, about 30 minutes.
  • 3In medium microwavable bowl, microwave peanut butter and remaining 2 cups chocolate chips uncovered on High 1 minute; stir until melted. Cool about 10 minutes. Place chopped peanuts in small bowl.
  • 4Remove ice cream cones from freezer. Working with one at a time, dip top of cone into chocolate-peanut butter mixture. Immediately roll in peanuts. Return cones to glasses; return to freezer until completely set.
