Quinoa Burgers

These vegetable-packed burgers are so flavorful and filling, you won’t miss the beef. They are nutritious and delicious!

Quinoa is a super food and is extremely versatile. I love tossing it into salads, eating it like oatmeal and even using it in baked goods. Recently, I decided to use quinoa in to make veggie burgers. I figured I could cut up veggies, mix in some eggs and pan-fry them. I started with fresh ingredients, which is always the secret to an amazingly dish. Before I knew it, I had these golden brown, veggie-packed quinoa burgers. Delicious!

I find that cooking the quinoa in chicken broth instead of water gives it much more flavor and makes any savory dish that much richer. I also figured I needed to have something to bind the burgers (other than the eggs), so I reached for one of my all-time favorite go-to ingredients—Bisquick® baking mix. I added a few tablespoons to hold everything together and to give the burgers extra flavor and texture.

The mixture is fairly wet, so I used a 1/4-cup dry measuring cup to scoop out the mixture and to add it to the frying pan. This worked out great because the burgers were all evenly sized.

I served my burgers over a salad and topped them with a dollop of mayonnaise. But you could certainly serve these on a bun like a traditional burger.
