Pumpkin Pie Pancakes

There’s no need to only enjoy pumpkin pie for dessert. Now you can have it for breakfast in the form of a pancake!

Pumpkin pie is one of the most beloved desserts in America. Just hearing the words, I immediately smell cinnamon and allspice in the air. It’s a staple in our house in fall and is expected on our Thanksgiving dessert buffet. (In fact, there are usually two pumpkin pies because everyone knows leftovers taste even better the next day.) 

Sadly, it seems like autumn is about the only time I get to have that pie. But now with the help of a little canned pumpkin puree, we can enjoy pumpkin pie—in the form of pancakes—all year round!

Pumpkin Pie Pancakes

Start with Bisquick® pancake mix. I love the convenience of the mix. I’m not a morning person and can use all the help I can get when it’s time to prepare breakfast for my 3 hungry children, so I'm all for shortcuts! 

I add the required liquid ingredients to the mix and then stir in the pie portion of the pancake: pumpkin and spices. Mix it all together, grab the griddle and you’re on your way to enjoying the flavor of pumpkin pie for breakfast. (And I don’t think adding a dollop of whipped cream on top is out of the question!)
