There are as many egg salad recipes as there are family secrets. Every family has their own version and my family is no exception. I’ve taken my family’s “famous” egg salad recipe and kicked it up a bit with the addition of curry powder and lightened it up by omitting the bread and serving it on endive leaves. (You can easily serve this on sliced bread too!) This salad is great as a light lunch, a snack or fantastic as an appetizer. Just set out a small bowl with the egg salad mixture and let your guests spoon it onto endive leaves.
