The Artichoke Appetizer Guests Will Freak Out Over

Bet you’ve never made artichokes like this! Get ready for an ooey, gooey mess of yum.

Yes, I know, these seem a little indulgent, but come on, what is life without a little bit of indulgence, or ok, cheese!? If you love stuffed artichokes, these are so for you! Basically they’re stuffed artichokes, loaded with melted brie and topped with some buttery breadcrumbs for a hit of crunchy texture.

So let’s go through how to make them! Grab your artichokes and cut the top third of them off.

Then bring a large pot of salted water to a boil.

Place the artichokes in the boiling water and boil for 10 minutes, then drain upside-down in a colander.

Meanwhile, grease an 8- or 9-inch pie plate and nestle the artichokes upright in the dish. If needed, trim the ends of the artichoke so they sit flat in the baking dish. Next, put the brie in a small pot along with the heavy cream. Let it melt slowly over low heat, stirring occasionally until it’s smooth and creamy. When the mixture is completely smooth, turn off the heat and, while still stirring constantly, add the egg yolk and ¼ cup parmesan. Season to taste with pepper.

Preheat the broiler to low and position the rack close to the bottom of the oven. Fill the artichokes with the brie sauce. It should cover the tops of the ‘chokes completely and fill into nooks and crannies of the leaves. In a bowl, combine the remaining ¼ cup parmesan, breadcrumbs, butter and thyme.

Sprinkle the mixture over top of the artichokes.

Place under the broiler and let them cook for about 3 to 5 minutes, checking often, until they’ve reached the perfect golden state.
