Two kinds of apples come together to make a sweet ‘n’ tart apple freezer jam perfect for topping warm pancakes.

Besides the brisk weather, changing leaves and cozy nights, I love fall for its abundance of flavors. Before the air turns cool and the nights begin to shorten, there’s a time when it still feels like summer but hints of fall start to appear…like apples! There are many flavors that speak “fall” to me, but apples are one of the earliest signs of the season and there are so many varieties to choose from.

This freezer jam combines sweet, crisp Gala apples and tart Granny Smiths to create an intense fresh apple flavor. There’s a bit of cinnamon and ginger for spice and heat. To keep this jam tasting of fresh apples, there is only enough sugar to just sweeten the deal; since this is a freezer jam, we can use a little less than traditional canning methods would require. I suggest spreading this jam on all kinds of breakfast goods: pancakes, biscuits and waffles are just the start!

Begin by peeling and dicing the apples. Chop the apples finely for a smoother jam or coarsely for a chunky jam.

Besides the apples, the only other ingredients are sugar, cinnamon, ginger, and pectin.

Mix the apples with the sugar, cinnamon and ginger. Coat well and set aside for 30 minutes to macerate.

After 30 minutes the apples will have dissolved the sugar and released some juice.

Pour everything into a pot, mix with the pectin and cook for 10 minutes. Ladle the jam into clean jars and cool to room temperature before freezing.
