Slow-Cooker Chicken with Apples and Crème Fraîche

Fresh thyme, apples, sage and crème fraiche give this slow-simmered chicken dinner irresistible depth.

As the days of fall grow shorter and colder, comforting dinners with warm, seasonal flavors are the meals I crave. Fortunately, with the help of my trusty slow-cooker, dishes like this are a snap to throw together. 

The ingredient list for this scrumptious chicken dish is fairly short, and yet, the combination manages to feel a bit special, without requiring a ton of work. I give credit to the combination of apple brandy and crème fraiche for that. The combination makes the most creamy, delicious sauce that coats tender apples and hearty chicken thighs perfectly. Have I mentioned how good it is over Betty Crocker Mashed Potatoes? So good.

Almost everything goes into the slow cooker at the same time—except the sage and crème fraiche, which we’ll add in later. I like to brown the chicken and shallots, and deglaze the pan with the apple brandy before adding them to the slow cooker. (You could, if strapped for time, skip that step.)

After the chicken and apples braise, stir in the crème fraiche and whip up some Betty Crocker Mashed Potatoes. They’re perfect for soaking up all of that creamy, herbed sauce. Dinner is served!
