The ingredient list for this scrumptious chicken dish is fairly short, and yet, the combination manages to feel a bit special, without requiring a ton of work. I give credit to the combination of apple brandy and crème fraiche for that. The combination makes the most creamy, delicious sauce that coats tender apples and hearty chicken thighs perfectly. Almost everything goes into the slow cooker at the same time—except the sage and crème fraiche, which we’ll add in later. I like to brown the chicken and shallots, and deglaze the pan with the apple brandy before adding them to the slow cooker. (You could, if strapped for time, skip that step.)
