Mexican Flatbread Pizza

Flatbread is one of trendiest things in restaurants…and such a versatile ingredient. It is a breeze to make a Mexican version at home!

Flatbread is one of my favorite appetizers to order at restaurants. It’s a delicious starter my whole family can agree on. But up until recently, I hadn’t made it at home. It was one of those things we only treated ourselves to when we went out to eat.

I decided to try flatbread at home a few weeks ago and couldn’t believe how easy and economical it was. I simply picked up some flatbread at the grocery store and made little pizzas out of them.

You can make a flatbread pizza anyway you would make your favorite pizza. For this version, I decided to make a taco pizza. For the sauce I used a mild salsa, and topped it with a mixture of shredded Monterey Jack and Colby cheeses. Then I added some chopped olives and baked it at 400° until the bread was crispy and the cheese had melted. I topped the baked pizza with freshly diced tomatoes, sliced green onions and avocado slices. You could also add sour cream or additional salsa. 

These make great appetizers but also work great for dinner. (I serve one per person.)
