Dreams DO Come True: Waffle Grilled Cheese with Bacon

Time to take grilled cheese to a new level of awesome. Here’s how to do it!

Your traditional grilled cheese sandwich routine just got a fun upgrade! These sandwiches are made with crispy waffles instead of slices of bread and include thick strips of bacon. They couldn’t be more irresistible or indulgent.

To make the waffles you’ll need Bisquick baking mix, milk, butter and an egg. And to assemble the grilled cheese sandwiches, you’ll need mayonnaise and mustard, bacon, shredded sharp cheddar and shredded gruyere cheeses. I like to use two kinds of cheese when I make grilled cheese; it adds a more dynamic flavor. I personally enjoy the combination of sharp cheddar and gruyere, but if you have two cheeses you’d prefer to use, go right ahead!

Combine the Bisquick, milk, butter and egg to make a thick batter.

Pour the batter into a preheated waffle iron and cook until golden brown. You should have two waffles, enough for four sandwiches.

To assemble the sandwiches, slice the waffles in two. Combine the mayo and mustard and spread on one side of the waffles. Top half of the waffles with bacon and cheese and cover with the other half.

Place sandwiches in a skillet with melted butter and cook on each side until golden brown and cheese is melted, about 5 minutes.
