S'mores Quick Bread

This foolproof bread has all the delicious flavors of your favorite campfire treat. It’s a can’t-miss crowd pleaser!

When summer hits, camping is one of my favorite things to do. I love being out in nature, and of course, I love the camping food! I think I can say that everyone’s favorite camping treat is s’mores. You just can’t go wrong with melted chocolate and marshmallows sandwiched between graham crackers. 

But I thought it would be fun to find a new way to bring those flavors into my kitchen–no fire required! 

This quick bread recipe is great for anyone who is afraid of yeast. Just stir and pour! The graham cracker bread is wonderful for a breakfast or a snack, but it’s taken to a whole new level when covered with a chocolate-marshmallow glaze. Things may get a little bit messy, but what is a s’mores-inspired recipe without the sticky fingers?

Start by making the bread.

Put the graham crackers into a food processor or blender and process them until they are fine crumbs.

In a bowl, combine all of the dry ingredients, including the graham cracker crumbs.

In the bowl of a stand mixer (or using a hand mixer), cream together the oil and brown sugar. Add in the eggs, one at a time. Then add in the rest of the wet ingredients and mix until combined.

Combine the wet ingredients and dry ingredients. Stir just until combined. The batter will be really runny, but don’t worry–it’s supposed to be that way!

Pour the mixture into a greased loaf pan. Bake in a preheated oven for about an hour. Remove the bread from the oven. Allow it to cool in the pan for 15 minutes. Remove from the pan to a cooling rack; cool completely.

For the chocolate glaze, heat the cream in the microwave for 90 seconds; add the chocolate chips. Let the mixture sit for a couple of minutes, and then stir until it is smooth and shiny.

Pour the glaze down the center of the top of the bread, allowing the glaze to run over the edges. Let sit for a minute or two.

Put the marshmallow crème in another bowl. Add 1-1/2 tablespoons boiling water, and stir until smooth. If the mixture is still too thick to pour, you can add an additional 1/2 tablespoon of boiling water. 

Pour the marshmallow glaze over the top of the chocolate glaze. Sprinkle on additional graham cracker crumbs, and then dig in!
