When the weather turns chilly I start craving cheesecake! Specifically, red velvet cheesecake. It’s one of my favorite holiday desserts, but I usually only make it for special occasions, as it can be super time-consuming. I mean, water baths? Special pans? Cracking? Cooling? Yeah, cheesecake is just too much work—until now that is…

Let’s get baking! Gather all the ingredients and preheat your oven to 350 degrees F. Place baking cups in standard-sized muffin pans. This recipe makes 18 individual pies.

Crush the chocolate cookies in a food processor. You could also use a plastic bag and a hammer or other heavy object to smash the cookies.

In a small bowl, mix the chocolate cookie crumbs, melted butter and honey or corn syrup. Using your fingertips, firmly press the cookie crumb mixture into the bottom of each baking cup, making sure the crumbs are firmly packed.

In large bowl, beat together the ingredients for the batter. This part is so simple, just throw everything in a mixing bowl and beat away! Divide the batter evenly between the baking cups till they are almost full.

Bake 30-35 minutes or until centers are firm. When done, remove from the oven and cool 15 minutes. Refrigerate mini pies in their pans for at least 45 minutes. Remove pies from pans and top with whipped cream.

You could use store bought whipped cream or you could make your own—totally your call. If you choose to whip up your own, it’s best to make it just before serving. To make your own whipped cream, add some heavy cream to a mixing bowl and whip it until stiff peaks form.
