How to Make Bunny Buns

To me, a holiday isn’t a holiday unless homemade potato rolls are on the table. Take, for instance the time I drove, after work no less, from Detroit to Illinois to celebrate Thanksgiving at my sister’s. First thing I did when I walked in the door (after hugging everyone, of course)? I made up this dough! The upcoming Easter holiday is no exception, and in fact, there’s an even cuter way to serve this fuss-free dinner roll—in the shape of a bunny!

How to: 

  1. Prepare Make-Ahead Potato Bread Dough as directed, through step three in the recipe
  2. Pinch off about 2 ounces of dough and roll into an 8-inch long snake-shape with lightly floured hands. 
  3. Twist so the bottom is looped and the two ends cross (making ears). 
  4. Grab another half-ounce of dough and roll it into a ball. Pop onto the center of the loop for a tail. Set the formed bunnies aside to rise for 45 minutes. (If you find that the tails are sinking into the rolls after rising, remove the tails, roll into a ball again, and replace before baking.)
  5. Bake rolls for about 15 minutes in a 400° F oven or until lightly golden around the edges.
