How to Make Bisquick® Pancake Bites

Breakfast just got easier (and more portable!) with these sweet and savory pancake bites.

I love those slow, lazy weekend mornings when you can relax, sip on a cup of hot coffee and whip up a batch of pancakes for the family. But, let’s be honest – those mornings are few and far between!

Still, a busy morning doesn’t mean you don’t have time to enjoy a pancake breakfast. These mini pancake muffins made with Bisquick® make it easier to have a special morning treat on the go. Plus, they’re cute, bite-size and super versatile – you can’t go wrong!

First, gather your ingredients. I’ve made two versions here – blueberry-lemon and bacon-cheddar – to satisfy my sweet-savory tooth, but you can add whatever fillings you fancy.


Stir together the basic ingredients for making pancakes, including the syrup! It makes these bites extra tasty and portable, especially if you can’t drizzle them with syrup later.


Fold in the mix-ins of your choice.


Divide the batter among lightly greased mini muffin cups.


Bake until the bites are light golden on top and spring back when touched. Let them cool a few minutes in the pan before removing.


Finally, drizzle on some extra maple syrup or sprinkle with powdered sugar and… Voila! Portable, poppable pancake bites in no time. Pass the syrup, please!
