Easy Peanut Butter, Banana and Berry Cookie Pizza

When my husband recently asked me if I was in the mood for pizza, my reply was “I’m ALWAYS in the mood for pizza.” It is, after all, the truth, and, seeing as I love sweets, dessert pizza is definitely not an exception to this rule. This scrumptious fruit pizza boasts a base of peanut butter cookie (made in a snap thanks to Betty’s Peanut Butter Cookie Mix), which is then topped with creamy peanut butter, fresh banana slices, berries, plus a few sprinkles of mini chocolate chips and a dusting of powdered sugar for good measure. It’s really easy to make, impressive to serve and is bound to please both peanut butter and pizza lovers alike. 

To begin, we start with the cookie base. I traced a 9-inch circle (using a pie plate as my guide) onto a piece of parchment. The cookie will spread a bit, but that’s all right.

Following the instructions on the pouch, prepare the cookie dough and spread it into the pre-traced circle. Pop it in the oven and bake until the cookie is firm around edges and soft, but just done, in center. Remove from oven to cooling rack. Cool about 15 minutes.

Meanwhile, gather up the toppings: peanut butter, berries, a banana and chocolate chips.

Once the cookie cools a bit, spread the creamy peanut butter “sauce” over the top.

Then pretty it up with some banana slices, strawberries, chocolate chips and powdered sugar. (Raspberries would also be delicious!)

Dust it with powdered sugar, slice it up into wedges and serve!

Ingredients

    • 1pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
    • 1/2cup creamy peanut butter
    • 1banana, sliced
    • 1cup sliced fresh strawberries or favorite berries
    • Miniature chocolate chips, if desired
    • Powdered sugar, if desired

Directions

  • 1Heat oven to 350°F. Using pencil, trace 9-inch circle onto sheet of cooking parchment paper. Place paper pencil side down on cookie sheet.
  • 2Make cookie mix dough as directed on pouch. Spread dough on parchment paper in even layer, keeping dough within shape of traced circle as best as possible.
  • 3Bake in center of oven 25 to 30 minutes or until cookie is firm around edge and soft, but just done, in center. Remove from oven to cooling rack. Cool about 15 minutes.
  • 4Spread peanut butter in even layer on slightly warm cookie. Cool completely.
  • 5Arrange banana and strawberry slices on top. Sprinkle with chocolate chips and powdered sugar. Cut into wedges to serve.
