Cranberry-Brie-Blue Cheese Biscuit Appetizer

Buttery biscuit dough baked with Brie, blue cheese and cranberries makes an enticing holiday appetizer that's ready in next to no time.

Full disclosure: This appetizer is one of my favorite dishes, ever. It’s simple, but when it appears on our holiday buffet, it’s the first thing to go and I have never, not once, been left with leftovers.

Now, confession no. 2: I stole this recipe from my Mom. Though she’s much more of a baker than a cook, she has a couple recipes tucked up her sleeve, with this one being one of the best. While Mom makes this using canned biscuits, today I’m sharing a version that uses Bisquick, which, in my opinion, gives it more of a homemade touch. It’s so easy and so delicious; I just know you’re going to love it.

So let’s get cooking already! To start, grab your ingredients. (You’ll find the complete list of ingredients and measurements below.)

Pour half the melted butter into the bottom of an 8- or 9-inch pie plate. In a bowl, mix together the Bisquick and milk.

Add rounded tablespoon sized dollops of batter to the greased pie plate until the pie plate is full of biscuit balls and all the dough has been used.

Drizzle the remaining butter over top the biscuits.

Now sprinkle the Brie, blue cheese and about half the cranberries over top the biscuits. Use your hands to push some of the cheese into the biscuits.

Place the pie plate on a baking sheet and bake for 25 to 30 minutes or until the cheese is melted and the biscuits are golden. For a finishing touch, sprinkle on the remaining cranberries.

Serve warm with cocktail forks or toothpicks. You’ll be amazed how quickly it disappears!

Ingredients

    • 1/2cup salted butter, melted
    • 2 1/4cups Original Bisquick™ mix
    • 2/3cup milk
    • 4oz Brie cheese, chopped (remove rind if desired)
    • 4oz blue cheese, crumbled
    • 1cup dried cranberries
    • Chopped fresh parsley, if desired

Directions

  • 1Heat oven to 350°F. Spray 8- or 9-inch pie plate with cooking spray.
  • 2Pour half of the melted butter into pie plate.
  • 3In medium bowl, mix Bisquick™ mix and milk. Add rounded tablespoon-size dollops of batter to pie plate until pie plate is full of biscuit balls and all dough has been used. Drizzle remaining butter over tops of biscuits. Sprinkle Brie, blue cheese and half of the cranberries over tops of biscuits. Press some of the cheese into biscuits.
  • 4Place pie plate on cookie sheet. Bake 25 to 30 minutes or until cheese is melted and biscuits are golden. Sprinkle with remaining cranberries and parsley. Serve warm using cocktail forks or toothpicks.
