Bottom-of-the-Cookie-Jar Marshmallow-Graham Bars

Need an incentive to clean out your pantry? Let these no-bake cereal bars, studded with cookie pieces and flavored with peanut butter, be your motivation.

If you are anything like me, then you pretty much keep your cookie jar (and pantry) full at all times. And sometimes, I want to try a new cookie recipe, but there are old cookies are still looming in the bottom of my jar. Sure, I could probably just eat them all myself, feed them to the boys or pitch them, but I have found a much better and even more delicious solution. It’s a simple no-bake bar—a hybrid of a chewy, marshmallow cereal treat and a peanut butter s’mores bar. And yes, they are as deliciously indulgent as they sound.

Here is what you need: 6 tablespoons of butter, 6 cups of mini marshmallows, 3 cups of Golden Grahams cereal, 1 cup of creamy peanut butter and 2 cups of your favorite cookies. I used peanut butter sandwich cookies, cream-filled chocolate sandwich cookies, chocolate chip cookies and peanut butter-stuffed pretzels, but really, any combination will do!


The only ingredient that requires prepping are the cookies. Simply give them a rough chop and you’re ready to move on.


Add the marshmallows, butter and peanut butter to a large saucepan and place over medium heat.


Stir the mixture continuously until it’s smooth and melted.


Remove from heat, then stir in the Golden Grahams cereal and cookies pieces, making sure to include the crumbs. Mix it all together until well-combined.


Press the mixture into a greased 9x13 inch baking dish. Melt 1 ½ cups semi-sweet chocolate chips in a medium microwave-safe bowl, nuking on high in 30-second increments ‘til chocolate is melted and smooth. Drizzle the melted chocolate on top of the bars and stick in the fridge until firm (about an hour).


Remove from the fridge and cut into bars. To make slicing easier, try spraying your knife down with non-stick cooking spray or warming it under hot running water.
