Slow Cooker French Onion Soup

This fantastic French onion soup makes a hearty meal. Start the soup in the morning and come home to a no-fuss dinner.

Soup

large onions, sliced (3 cups)

tablespoons margarine or butter, melted

tablespoons all-purpose flour

tablespoon Worcestershire sauce

teaspoon sugar
1/4
teaspoon pepper

cans (14 1/2 ounces each) ready-to-serve beef broth
Cheesy Broiled French Bread

slices French bread, 1 inch thick

cup shredded mozzarella cheese (3 ounces)

tablespoons grated or shredded Parmesan cheese
  • 1 Mix onions and margarine in 3 1/2- to 6-quart slow cooker.
  • 2 Cover and cook on high heat setting 30 to 35 minutes or until onions begin to slightly brown around edges.
  • 3 Mix flour, Worcestershire sauce, sugar and pepper. Stir flour mixture and broth into onions. Cover and cook on low heat setting 7 to 9 hours (or high heat setting 3 to 4 hours) or until onions are very tender.
  • 4 Prepare Cheesy Broiled French Bread. Place 1 slice bread on top of each bowl of soup. Serve immediately.

I followed most reviewer's suggestions... cooked onions overnight (i sliced 7 onions, 4 TBS butter & 1 TBS coconut oil). They were all nice and brown in the morning and smelled so good. I then added the other ingredients and included the 1/2 cup wine. The wine taste ended up being too strong so added more bouillon, perfect! Will defnitely make again.

Just made this today. Thanks lalanalla for the hint about cooking the onions on low overnight. I sliced them up and put them in the slow cooker with the melted butter before we went to bed, then added the other ingredients this morning. It was very, very good. I used 1/2 low sodium beef broth and 1/2 beef stock for added flavor and it wasn't salty at all (which is good, since we're watching our sodium here). I used vidalia onions and 4 Tbl of butter and flour. I would definitely make this again, would be impressive for company without a lot of work.
