Say 'I Love You' with Cake Pops

Cake pops are a treat that brings out the kid in all of us. So why not spread some love from your kitchen this Valentine's Day with my Chocolate Espresso and Cream Cake Pops?

If you want to serve up some love from your kitchen this Valentine's Day, you may want to try my Chocolate Espresso and Cream Cake Pops. These yummy little decadent pops will bring out the kid in everyone and certainly put a smile of their faces. I made these and gave them out to my daughter’s cheer team and they went crazy over them. Everyone told me that they were the best tasting cake pops they had ever eaten.

So if you want to know if this is a tested recipe, the answer is yes. Over 30 cheerleaders and their coaches enjoyed them!

The secret to the amazing, decadent flavor of these pops is Betty Crocker® SuperMoist® Triple Chocolate Fudge cake mix combined with instant espresso coffee powder and Betty Crocker® Whipped Cream Frosting. This combination is a true winner.

I prepare the cake mix according to the directions on the box and add some espresso instant coffee to the batter. Once the cake is baked and cooled, I crumble it in a bowl and mix in the frosting. It forms a great dough-like mixture that makes rolling the pops so easy. I even shaped some of the cake pops into hearts.

My favorite part is decorating them. I tend to get a little crazy with sprinkles, swirls and colors. But you can certainly just give them a dip in melted candy and lightly drizzle with colored sprinkles. These cake pops are almost too pretty to eat.

If you want to decorate the cake pops like I did, you can use decorative icing pens, which can be purchased at craft stores that sell cake-decorating supplies. The only problem with making them so beautiful is that they don’t last long. Kids and adults will be fighting for the prettiest ones. Before you know it, the cake pops will be gone...but certainly not forgotten!
