  Beets

This round, typically reddish purple root vegetable comes with leafy green tops that are also edible and known for their high nutrition value. Less common beet varieties are white and one that is ringed in red and white like a candy cane. Beets have an earthy flavor and are often served pickled.

How to Buy

Choose firm, round, smooth, deep red beets with fresh, unwilted tops. 

How to Prepare

Cut off all but 1 inch of beet tops. Wash beets; leave whole with root ends attached.

How to Cook Conventionally

Boil: Use 6 cups water, 1 tablespoon white vinegar (to preserve color) and salt (if desired). Boil covered 40 to 50 minutes or until tender.

Steam: Covered 45 to 50 minutes or until tender. Add boiling water during steaming if necessary.

How to Microwave

Place in 1 1/2-quart microwavable casserole; add 2 cups water. Cover. Microwave 18 to 20 minutes, rearranging once, until tender. Let stand 5 minutes; drain.
