Ingredients

cup reduced-fat salad dressing or mayonnaise

Salad

cups shredded cabbage (1 1/2 lb)

cup shredded carrots (2 medium)

cup chopped green onions (8 medium)

cup shredded zucchini (1 small)

    In large bowl, mix dressing ingredients until well blended.

    Add salad ingredients; toss to mix well. Refrigerate at least 30 minutes to blend flavors.

Expert Tips

  • Coleslaw comes from the Dutch word koolsla, meaning “cool cabbage.”
  • Bagged coleslaw or broccoli slaw mix can be used instead of the shredded cabbage. You’ll save time, too!
