Spicy Cornmeal Cod

These golden fillets are coated with a cornmeal-herb mixture and baked to crispy perfection.

Ingredients

pounds cod, perch or other medium-firm fish fillets, about 1/2 inch thick
3/4
cup cornmeal
1/4
cup Gold Medal® all-purpose flour
1/2
teaspoon salt
1/2
teaspoon garlic powder
1/2
teaspoon dried oregano leaves
1/2
teaspoon ground red pepper (cayenne)
1/2
teaspoon pepper
2
eggs
3
tablespoons butter or margarine, melted

Directions

  • 1 Heat oven to 500ºF.
  • 2 Cut fish fillet into 4x2-inch pieces. Mix remaining ingredients except eggs and butter. Dip fish into eggs, then coat with cornmeal mixture.
  • 3 Place fish on ungreased cookie sheet. Drizzle butter over fish. Bake 10 to 12 minutes, turning fish once, until golden brown.

my husband also loves this. he says this is now the only way he wants cod. although before i cooked it, i read the other reviews and took the suggestion and added more spice.. i added a lot more cayenne and added in red pepper flakes. will make again.

My husband loved this (he rated it a 4); I thought it was bland (my rating a 2=averaged a 3). I used half corn meal/bread crumb mixture and tried to be generous with the spices due to past reviews here. Still bland. My saving grace was I made tartar sauce with tobasco which gave the fish some zip.

This tastes great, although not very spicy. It is super easy to make, using common kitchen ingredients you will always have on hand. No special trips to the market for some exotic, one-time-use $pice or herb. I would modify it by adding some Italian style bread crumbs or perhaps some cornflakes. A little bit of fresh lemon zest and juice takes this one home. YUM! Come on...2 spoons because you don't like the plate they used in the photo????
