Bisquick™ Heart Smart™ Pancake & Baking Mix: The key to an "impossibly easy" pie, this mix forms the perfect crust and base in one step.

Fat-Free (skim) Milk: Used specifically to keep the pie light while providing the necessary liquid for the Bisquick™ mix.

Large Eggs or Fat-Free Cholesterol-Free Egg Product: These bind the ingredients, giving the pie its structure and a rich, custardy texture.

Ingredients

  • 1 cup chopped zucchini
  • 1 cup chopped tomato
  • 1/2 cup chopped onion
  • 1/3 cup grated Parmesan cheese
  • 2/3 cup Bisquick™ Heart Smart™ Pancake & Baking Mix
  • 3/4 cup fat-free (skim) milk
  • 2 large eggs or 1/2 cup fat-free cholesterol-free egg product
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley, if desired

Instructions

  • Step

    Heat oven to 400°F. Lightly grease the bottom and side of a 9-inch glass pie plate with cooking spray.

    Sprinkle zucchini, tomato, onion, and cheese evenly in the pie plate.

    In a medium bowl, stir Bisquick, milk, eggs, salt, and pepper with a fork until blended. Pour evenly into the pie plate.

    Bake about 35 minutes or until a knife inserted in the center comes out clean.

    Cool at least 10 minutes. Garnish with parsley before serving.
