Easy Turkey Pot Pie (Cooking for 2)

Ingredients

  • 1 cup frozen mixed vegetables
  • 1 cup cut-up cooked turkey
  • 1/2 cup canned condensed cream of chicken and mushroom soup
  • 1/4 cup canned condensed chicken broth
  • 1/2 cup Bisquick Heart Smart® mix
  • 1/8 teaspoon poultry seasoning
  • 1/3 cup fat-free (skim) milk

Steps

    Heat oven to 400°F. In ungreased 1-quart casserole, stir together vegetables, turkey, soup and broth. Microwave on High 3 minutes; stir.

    In small bowl, stir remaining ingredients until blended. Pour over turkey mixture (crust will rise during baking).

    Bake uncovered 20 to 25 minutes or until light brown.

  • Mixed greens tossed with mandarin orange segments and a fat-free vinaigrette makes a healthful side for pot pie.
  • For another meal, mix the leftover cream soup and broth; toss in leftover veggies and cooked rice or pasta, then heat for a hearty soup meal.
