Key Limes: This recipe uses both the zest and juice of Key limes. These tiny, round limes have smooth skin and pale juice. If you can’t find Key limes, regular limes are a great substitute!

1. Make the Dough

Mix fresh Key lime zest (2 tablespoons!) into the sugar cookie mix, along with 1 egg and some melted butter.

2. Bake the Cookies

Scoop the cookies onto parchment-lined baking sheets, leaving space between the dough scoops for the cookies to spread. Bake for about 10 minutes, or until the tops are dry, and the edges are lightly golden.

3. Make the Icing

A simple mix of fresh Key lime juice, Key lime zest, and powdered sugar make the flavorful glaze for these zesty cookies.

4. Ice the Cookies

Once the cookies have baked and cooled enough to handle and hold their shape, dip the tops in the icing. Set the cookies on a rack to let the icing set.

Store cookies once the glaze has set in a single layer in an airtight container for up to 3 days. If you need to stack the cookies, separate the layers with parchment paper or waxed paper.

Store cookies once the glaze has set in a single layer in an airtight container for up to 5 days. If you need to stack the cookies, separate the layers with parchment paper or waxed paper.

Freezer Storage

Package the cookies in an airtight freezer-safe container, placing parchment paper or waxed paper between the layers. Store in the freezer for up to 2 months.

Thawing

Thaw the cookies at room temperature. Do not recommend heating in the microwave as the icing can burn.

Icing

  • 1 cup powdered sugar
  • 1 to 2 tablespoons fresh Key lime juice
  • 1 tablespoon fresh Key lime zest (from about 2 Key limes)
  • Additional fresh Key lime zest for garnish, if desired

Instructions

    Heat oven to 350°F.  Line two baking sheets with parchment paper.

    In a large bowl, stir all Cookie ingredients with a spoon until a soft dough forms. Drop dough by rounded tablespoonfuls at least 2 inches apart onto baking sheets.

    Bake one pan at a time on the center rack for 10 minutes or until set and golden on the bottoms. Cool 2 minutes on the pan. Remove from pan to cooling rack; cool completely, about 15 minutes.

    Meanwhile, in a small bowl, mix powdered sugar, 1 tablespoon Key lime zest, and 1 tablespoon Key lime juice. Mix until smooth. Add additional juice as needed.

    Dip the tops of the cooled cookies into the icing. Set icing side up on cooling racks. Let stand about 10 minutes or until the icing is set.
