Old El Paso™ Chopped Green Chiles: These add mild Southwest flavor and a gentle touch of heat. If you want even more flavor, feel free to add another can. If your family doesn’t like spice, you can omit the chiles and simply add 2 teaspoons of Old El Paso™ Taco Seasoning.

Ground Beef: Lean ground beef creates a hearty base for the casserole and gives the dish its classic cowboy-style comfort food feel. We like to use at least 80% lean beef to reduce the amount of grease. If you prefer, swap the ground beef for ground turkey or ground chicken.

How to Make Easy Cowboy Casserole

This dish is simple to assemble and bakes up golden and bubbly in the oven. Here’s a quick look at how to make it—keep scrolling for the full recipe!

1. Make the Biscuit Topping

In a medium bowl, stir together Bisquick™, shredded cheddar cheese, milk, green chiles, and softened butter until a soft biscuit dough forms. Set aside.

2. Make the Filling

Cook a pound of ground beef over medium-high heat for 5 to 7 minutes, stirring occasionally, until browned. Drain any excess grease. Stir in 2 cans of Progresso™ Protein Southwest-Style Black Bean Soup plus 1/4 cup water until everything is well combined.

3. Add the Topping

Using a scoop or spoon, dollop the biscuit dough over the beef and bean mixture. Sprinkle more cheddar cheese over the top.

4. Bake and Enjoy

Bake for 20 to 25 minutes at 425°F or until the biscuit topping is golden brown and a toothpick inserted into the center of the thickest biscuit comes out clean or with just a few dry crumbs. Ingredients

  • 2 cups Bisquick™ Original Pancake & Baking Mix
  • 1 cup shredded cheddar cheese (2 oz), divided
  • 2/3 cup milk
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 tablespoon butter, softened
  • 1 lb ground beef (at least 80% lean)
  • 1 can (18.5 oz) Progresso™ Protein Southwest-Style Black Bean Soup
  • 1/4 cup water

Instructions

    Heat oven to 425°F. In a medium bowl, stir together Bisquick™, 3/4 cup cheese, milk, chiles, and butter until combined. Set the dough aside.

    In a 10-inch oven-safe skillet, cook beef over medium-high heat for 5 to 7 minutes, stirring occasionally, until browned; drain.

    Add the soup and water; stir until combined.

    Using a scoop or a spoon, dollop the dough over the meat and beans. Using the back of a spoon, press the dough dollops to flatten slightly to about 1/2-inch thick. Sprinkle remaining cheese on top of the dough.

    Bake 20 to 25 minutes or until the crust is golden brown and a toothpick inserted into the center of the thickest biscuit comes out clean or with just a few dry crumbs. Let stand 5 minutes before serving.
