The biscuits get their name from the technique of melting the butter in the pan, then pouring the batter on top. As the biscuits bake, the butter soaks into the biscuits, resulting in ultra-fluffy, deliciously buttery biscuits.

Bisquick™ Original Pancake & Baking Mix: Starting with Bisquick makes this recipe easy and guarantees a delicious and tender biscuit. 

Ranch Dressing Mix: Use the powdered ranch seasoning mix from a packet or shaker container. The dry seasoning adds a savory punch without adding additional liquid, for a bolder ranch flavor.

Sharp Cheddar Cheese: You can purchase shredded cheese or shred it yourself. While most of the cheese is mixed into the biscuit batter, be sure to reserve some for the top!

Unsalted Butter: Unsalted is recommended for this recipe. Between the ranch dressing mix and the Bisquick, this recipe has plenty of salt already.

Other Ingredients You’ll Need: Whole milk and dried herbs (chives, parsley, and/or dill).

1. Melt the Butter

This recipe begins with melting the butter in the baking dish. Just place it in the oven while it is preheating and remove as soon as it is melted.

2. Mix the Batter and Bake

Mix up the batter and carefully spread it into the pan with the melted butter. Top with remaining cheese and a dusting of ranch. The butter will surround the batter and puddle on top; this is where the “butter swim” title comes from!

3. Garnish and Enjoy!

A little sprinkle of dried (or fresh!) herbs adds a finishing touch. These biscuits are best enjoyed warm. Since they are so tender and delicate, let them cool about 10 minutes before serving.

Ingredients

  • 1/2 cup unsalted butter
  • 2 1/2 cups Bisquick™ Original Pancake & Baking Mix
  • 2 cups shredded sharp cheddar cheese (8 oz), divided
  • 3 tablespoons ranch dressing & seasoning mix
  • 1 1/4 cups whole milk
  • Assorted dried herbs for garnish (chives, parsley, dill), if desired

Instructions

  • Step

    Heat the oven to 400°F. Place butter in an 8-inch square baking dish and heat in the oven just until melted.

    Meanwhile, in a large bowl, mix the Bisquick, 1 1/2 cups of the cheese, and 2 tablespoons of the seasoning mix until blended.

    Add the milk and stir just until a thick, wet batter forms and a few dry streaks and lumps remain.

    Spread the batter into the baking dish with the melted butter (some butter may pool around the edges).

    Top with the remaining 1/2 cup of cheese and sprinkle with the remaining 1 tablespoon of the ranch seasoning mix. Cut the dough before baking into 9 biscuits, 3 rows by 3 rows.

    Bake 16 to 18 minutes or until the top and edges are golden brown. Remove from the oven to a cooling rack. Sprinkle with dried herbs. Cool 10 minutes before serving.
